Cinco de Mayo Easy Chicken Fajitas

If you're planning to celebrate Cinco de Mayo at home or you've been rained out, here's an easy, kid-friendly recipe for the entire family to enjoy!

1 1/2 pounds of boneless chicken breasts cut into thin strips
2 red or green bell peppers julienned (cut into thin strips)
2 red onions julienned (cut into thin strips)

Suggested Toppings:
Salsa, shredded cheddar cheese, sour cream and chopped cilantro

Chicken Marinade:
2 limes-juiced
4 teaspoons olive or canola oil
1 1/2 teaspoons of cumin
1 1/2 teaspoons of garlic powder
1 teaspoon of salt
1/2 teaspoons of red pepper flakes (optional)
1 1/2 teaspoons of dried oregano
1 1/2 teaspoons of smoked paprika 


Marinade the chicken for at least 2 hours.
In a hot skillet, sauté the onions and peppers with salt and pepper.
Once tender, remove from the pan.
In the same skillet, add the marinaded chicken and cook for 5-6 minutes until the chicken is no longer pink.
On a tortilla, add the pepper and onions, chicken and your favorite toppings.

Serves 4-6
