Recipes to Beat the Summer Heat

When it's too hot to turn on the oven, it's great to have some healthy, delicious, no-cook recipes on hand. It's important to eat healthy and keep hydrated when spending extra time outdoors in the heat. Your body needs to fuel to keep up your energy levels and help you feel great all day long. 

Beat the summer heat with these dinner and dessert recipes.


Rainbow Wrap Recipe

Ingredients:

  • 1 Tablespoon of Chopped Chives
  • 1 Wedge of Laughing Cow Cheese
  • 1 Whole Wheat Tortilla
  • Red tomatoes and red bell peppers, thinly sliced
  • Orange carrots and orange bell peppers, thinly sliced
  • Green avocados and lettuce, thinly sliced
  • Purple cabbage, thinly sliced

Instructions:

Combine the chives and cheese and spread it over the tortilla. Fill the tortilla with crunchy and colorful veggies and wrap the tortilla tightly.

  • 3 mg of calcium
  • 78 mcg of beta-carotene
  • 3 mcg of folic acid
  • 6 mcg of vitamin K


Cantaloupe Sushi

Ingredients:

  • 1 Cantaloupe
  • 1 Cucumber
  • Shredded Coconut or Sprinkles

Instructions:

Cut cantaloupe into chunks. Use a vegetable peeler to peel the cucumber in long, thin slices. Wrap the cucumber slices around the cantaloupe chunks and secure them with toothpicks. Sprinkle the sushi pieces with coconut or sprinkles.
